Achar Gosht (Pickle-Spiced Meat Curry)

A bold, tangy curry that gets its signature flavor from achar (pickle) — a classic way to bring extra depth to a simple meat curry.

Ingredients:

  • 500g meat of your choice (mutton, beef, or chicken)
  • 3-4 tbsp achar (mixed pickle), with a little of its oil
  • 2 medium onions, sliced
  • 1 tbsp ginger-garlic paste
  • 2-3 tomatoes, chopped
  • 3-4 tbsp cooking oil
  • Salt to taste
  • 1/2 tsp turmeric powder
  • Fresh coriander, for garnish

Method:

  1. Heat oil in a pan and fry the sliced onions until golden brown.
  2. Add ginger-garlic paste and cook for a minute.
  3. Add the meat and cook until it changes color.
  4. Add tomatoes, turmeric, and salt. Cook until the tomatoes soften and the oil separates.
  5. Stir in the achar and mix well. Add a splash of water, cover, and simmer until the meat is tender.
  6. Garnish with fresh coriander and serve hot with rice or roti.

Desi Ghee Rice

Simple, fragrant, and comforting — this is rice the traditional way, made rich with desi ghee.

Ingredients:

  • 2 cups rice, washed and soaked for 20 minutes
  • 3 tbsp desi ghee
  • 1 small onion, thinly sliced
  • 2-3 whole spices (cinnamon stick, cardamom, cloves)
  • 4 cups water or stock
  • Salt to taste

Method:

  1. Heat ghee in a pot and fry the sliced onion until golden and crisp. Set some aside for garnish.
  2. Add the whole spices and sauté for 30 seconds until fragrant.
  3. Add the soaked rice and gently stir to coat with the ghee.
  4. Pour in the water, add salt, and bring to a boil.
  5. Reduce heat, cover, and simmer until the rice is fully cooked and the water is absorbed.
  6. Fluff with a fork, top with the reserved fried onions, and serve.

Honey Nut Energy Bites

A quick, no-cook snack that's perfect for busy days — naturally sweetened and packed with energy.

Ingredients:

  • 1 cup mixed nuts (almonds, walnuts, cashews), roughly chopped
  • 1/2 cup seeds (sesame or flax)
  • 1/3 cup honey
  • A pinch of cardamom powder

Method:

  1. In a bowl, mix the chopped nuts and seeds together.
  2. Warm the honey slightly and pour it over the nut mixture. Add the cardamom powder and mix well until everything is evenly coated.
  3. Roll the mixture into small bite-sized balls using your hands.
  4. Place on a tray and refrigerate for 30 minutes to firm up.
  5. Store in an airtight container and enjoy as a quick snack.

Murabba Yogurt Parfait

A refreshing, not-too-sweet dessert that pairs the tangy-sweet flavor of murabba with creamy yogurt.

Ingredients:

  • 1 cup plain yogurt
  • 3-4 tbsp murabba, chopped into small pieces, plus a little of its syrup
  • 2 tbsp nuts, chopped, for topping
  • 1 tsp honey (optional)

Method:

  1. In a glass or bowl, layer yogurt and chopped murabba, alternating layers.
  2. Drizzle a little of the murabba syrup and honey over the top, if using.
  3. Finish with a sprinkle of chopped nuts.
  4. Serve chilled.
