Pheni, often referred to as Phenian or Semia, is a type of vermicelli-like pasta that holds significant cultural and culinary importance across South Asia, particularly during Islamic festivals like Eid-ul-Fitr. It is characteristically made from refined wheat flour (maida) dough which is expertly stretched and drawn into extremely thin strands, forming brittle, nested, disc-shaped nests. Unlike standard pasta, Pheni is often pre-fried or roasted to a light golden color before packaging, giving it a distinctive nutty aroma and making it very quick to prepare. The traditional way to serve Pheni is in a sweet dish (meetha) where the brittle strands are steeped in hot, sweetened milk (often flavored with cardamom, saffron, and nuts) until they soften and absorb the liquid, creating a rich, creamy, and highly aromatic dessert. Its delicate texture and sweet flavor make it an essential and much-loved element of festive morning breakfasts.
